Projects
I finally got around to making some more earrings last night. It didn't take long, but I got through two pairs (all while nursing Jeremiah)! Next thing is a necklace...

Saturday
We went out to La Cabana this afternoon with Andy, Corin, and the boys...SO yummy!! I love their chicken fajitas!
And this morning after Jeremiah went down for his first morning nap...Joel played with Olivia and I got to take an hour and a half nap!! It felt so good. It has been awhile...when 10 o'clock rolled around I was wishing for 3 or 4 more hours.
After lunch Joel went to Casey's house...so it has been a nice relaxing afternoon at home with the kids (oh how I LOVE saying "kids").
Current happenings:

Baking potatoes to make a whole bunch of frozen hashbrowns. I got a 10lb bag of potatoes for $0.75 so...the logical thing to do is make a ton of frozen hashbrowns, right??

My precious girl is eating some dinner...it's leftover night since Daddy is gone. :)

And he's taking a nap...like always.

pumkin spice is everything nice...
In my attempt to increase the size of my cookbook, each week I make it a point to try at least one new recipe. This morning I made pumpkin spice waffles.
Oh my goodness they were SOOO good! I had two. And they aren't small waffles either. But...I'm breastfeeding so it all works out calorie-wise, right?
The recipe called for 4 Tbs of butter, so I tried out my coconut oil and did half butter half coconut oil. The recipe said to use melted butter, so after I melted the butter I put in the 2 tbs of coconut oil. It is solid at room temperature and melts at about 78 degress. So it melted in the butter, but then I added it to the milk/egg/pumpkin mixture and I soon had hard chunks of coconut oil in the bowl and sticking to the side and spoon. I put some warm water in the sink and put the bowl in that and that seemed to help a little bit. There was still chunks of the coconut oil floating on top, but everything on the sides melted back in.
So...I guess I won't be substituting coconut oil in where I need melted butter because it just goes to a solid too quickly!
The good news is that there wasn't any coconut flavor in the waffles! And I made my honey whole wheat bread last night and used half butter half coconut oil, and the bread turned out great just like it always does!! Now if only the coconut oil wasn't so expensive...
Yesterday was Valentines Day. It was my goal all day to have Olivia sit down and color Joel a heart or something. But that never happened. When I finally did get the chance to do it, Joel walked in! How sweet he is...flowers and card in hand. And we have been looking for a shelf to put over the computer so we went to Lowes to find a shelf.
I didn't really have anything planned for dinner, so I had started thawing some chili in the sink. Despite double bagging it, somehow the water got into the bag of chili. So...we stopped by Costco for their chicken alfredo dinner thing. I also figured it would be a good chance to get Joelie a new bluray player since he dropped his on Christmas and broke it. There was one there that was only $100 after $30 off! Sweet!!
So came home, had some dinner, made brownies, and got the kiddos off to bed. Great Valentines Day.
Can I just mention how much I LOVE to be able to say KIDS...plural...more than one...!
And can I also mention how great a sleeper Jeremiah is? 7-8 hours each night at 2 months!! And...when we put him in his crib all swaddled up, he hardly ever cries!! Sometimes we even get smile before he drifts off to sleep.
As for Olivia....oh how I wish I had a picture from Sunday. I was getting ready for church and she was sitting on the counter playing with my earrings and watching me get ready. I turned to talk to Joel for seriously A FEW SECONDS, and when I turned around she was holding my open mascara with it streaked all down her cheek. She had managed to get a little bit on her eye lashes. It was so hard not to laugh...and Joel actually had to tell her to stop and explain to her why because I was laughing too hard. I wanted to take a picture so bad...but I figured that would have totally encouraged her to do it again.

good food
Getting pregnant with Olivia and especially making her baby food has totally changed my perspective on food. I have changed how I eat so much, and I am still changing. There is just so much I don't know and there is SO much junk out there!!
Reading about the whole Taco Bell meat thing is disgusting (http://www.milehimama.com/2011/01/26/is-taco-bell-meat-actually-beef/)... pretty sure Joel and I are totally cutting back (if not eliminating) fast food places like that. Caruso's all the way baby!

I have spent hours reading and researching online. My most recent addition to my kitchen is coconut oil.
I had always heard that coconut oil has a huge amount of saturated fat, so you shouldn't eat it. YES, it does have a huge amount of saturated fat, but they are medium length chains, not the long chains found in animal fats. So our bodies digest these totoally differently and coconut oil is hugely beneficial.
I'm kinda nervous to use it! Hopefully our food won't taste like coconut!

oh coffee...
I broke out my coffee pot again this morning. I'm just waiting for it to finish its cleaning cycle. Opening up that bag of coffee beans was amazing...that smell is amazing. Hearing the grinder, smelling the grinds...oh how I love coffee. I SO wish I could work as a a barista! You know..with all that free time I have. I bought decaf coffee, and I'm kinda scared that I'm going to be disappointed. But...I have a lot of it so if I'm disappointed, I'm going to be disappointed for about 2 lbs worth of decaf. T-10 months until caffiene.
Jeremiah is doing great...8 weeks old yesterday. He is smiling now...although his grumpy face does seem to be this everday look!
Olivia had a shirt pocket full of marbles the other day, leaned over the toilet after pooping and one fell out. I of course called for Joel. I had no idea what to do with a marble in the bottom of a toilet that had poop in it!! He went and got one of my long handled slotted spoons and scooped it right out. My hero. Hopefully he threw away that marble and spoon...
Whenever I tell Olivia "no" for something she has asked for she says, "Please mom, haven't you ever been in love before?" Cute...until you've heard it a million times.
Jeremiah is doing great...8 weeks old yesterday. He is smiling now...although his grumpy face does seem to be this everday look!
